Simple guide to potatoes

For mash potatoes and baked potatoes, the starchy potatoes, like Idaho Russet are the best, and for best French fries, use KatahdinFor soups, roasting, boiling, salads and casseroles the best are the vaxy potatoes which are Red Bliss aka red potatoes, the Arondiak Blue, Purple Viking, and new potatoes, you know those shiny smaller potatoes that are fresh and cute 🙂..Also fingerling potatoes, those yellow longer shaped ones…All purpose potatoes, which means don’t panic if you couldn’t find the red potatoes to roast in your pantry, you can use: Yukon Gold or Purple Peruvian. The purple potatoes might not be sitting pretty on the shelves of your Walmart, but you can find them in health food stores or try your local fresh market.

 

My favorite potatoes are the red and the new potatoes, and that tells you how I like my potatoes best 🙂 Roasted. Yeah. Bon apapetit.

 

Pesticides can cause depression.

Can pesticides cause depression? YES.

Pesticides . Organophosphate pesticides are known for their effects on the nervous system. One of these pesticides: Diazinon. In the US their started using it after the second World War. This chemical shuts down the nerve responses in humans by depressing the enzyme AGhE. In the article attached, the name of this chemical is mentioned by it’s full name.

Severe acute poisoning means someone ingested pesticide (unfortunately kids) , in this case call 1.800.222.1222.

Chronic signs of toxicity aside from symptoms of depression… are:
*headaches *chronic fatigue *loss of appetite *allergies *reproductive disorders *liver damage *cancer *sudden behavioral changes (in kids)

Steps to get rid of toxicity:

#1. eat organic if possible, and wash fruits and vegetable before eating them.

Thoughts on teaching and homework

I am not licenced educator…but what if teachers divided the class times in 3 segments:

Lecture/ instruction/ practice.

Instead of having the parents do their kid’s homework, the kids could do it during school hours, at the end of each class for about 20 minutes. 

Then as soon as they make it home, kids could go outside and attend sports instead of sitting 2 Xtra hours suffering through homework with tired parents or alone? With no time left to play? 

Stress is fueled by fear

90% of your fears come from memories of your past and they are not real right at this moment. 

Fear turns on stress that turns on habit. There is a circuit on your brain that makes this real. 

Exp: you’re are afraid of speaking in public because  once you stood up in 10th grade, you said something and the whole class burst out laughing. Guess what? That’s in the past, you’re not in 10th grade anymore. There is no grantee that this incident will repeat, as a matter of fact, you’re more mature now, hopefully more confident, and you’ll be speaking to a mature audience, that came there to listen to you, so your fear can sit in the past. With that decision you reduced your stress.

If your fear won’t leave you alone and stops you from doing things, take a piece of paper, write it down. This exercise will disconnect the thought from your brain while transfered on paper. This paper then, you can throw away, burn, set free in the wind, and let go. As you let go to the paper, imagine letting go of that fear. You might need to repeat this every time you have that fear (or other fears) in order to get into the habit of LETTING GO. 

John Maxwell is well aware of past fears, and suggested making and keeping a “crap board next to your “vision board. 

Your vision board can contain pictures, words that illustrates your future, that motivates you into action, and gets you into a positive disposition. a vision board is basically a tool for upgrading your possibilities. 

Your crap board can include your fears, your negative actions or feelings and or things that block u from positive actions. Your crap board allows you to  stay honest and recognize yourself. 

Some would argue that the crap board will just encourage our negative behavior to continue, but in John Maxwell’s opinion, it reminds you why you are acting in a certain way, and since your vision board is displayed right beside it, you always have the bright side in sight of your future. Could this future look unrealistic right now? absolutely. When I created my first vision board it contained images of things that I haven’t obtained, but I was able to envision a future and work towards that, instead of dwelling on my then current unfavorable situation…I didn’t know I was supposed to have a crap board back then, which now I see just as a reminder of why I’m not realizing my future the way I intended…and it’s mostly because my fears that hold me back and because my vision changed over time. 

My fears were/are being average, not good enough, not having enough money, fear of letting others down, not being the standard beauty with the long blond hair in a skinny body….etc…

Creating a vision board gave me perspective. I created my very first vision board with Gigi Hashish, who is my friend and at the time my mentor. I’m thankful for her. For her guidance, even tho at at the time I thought she was too motherly; over time I realised that she’s a friend first and foremost, and then and mentor.

My vision board has been updated since I created it the first time, and it will be updated again soon. As I move forward in life my priorities change, but what will never change is moving forward. Whether it is visible to others or not…I really don’t see a need for validation anymore, therefore I’m doing what I see it’s best for me and those around me. 

With the time passing my vision of the future changes. Things that seemed super important and hard to attain diminished in importance and some new goals emerged. My current vision board hasn’t been updated since 2013. It has some blank areas also…it’s been through a lot, just like me, but one thing will never change: a positive outlook, on life, on people, on animals and on the world in general.

I am now more calm, I let go of many thought that I was harboring for decades thinking they help me stay on my toes and be aware…I’m tired of walking on my tippy toes…I’m standing my ground and walking stronger then ever…

So, per my advice, I will create my crap board, and I’ll make sure to place it side by side with my new upgraded vision board once they’re complete, until then, peace out, and enjoy the picture of my current incomplete and old vision board. please make time to make your own, and show me. I care about you and your vision board. 

And don’t be afraid kick your fears in the butt and move forward. If you feel you

Palacsinta Crepes

I am making palacsinta or as the French call it, crepes. without a recipe.

Major smoke alarm warning!!! Smoke alarms don’t like crepes. no matter what oil u use, how hot or what pan, you’ll have smoke in the kitchen, not life treatening,  but enough to set smoke alarms off. so open windows and doors or disable your smoke alarms…lol

I never counted how much flour is start with, maybe bc I’m so acustumed to eyeing quantities…start with one or two cups of flour. 

So I add flour in a bowl

and I crack an egg on top. Next I drop a pinch of salt, a splash of milk and water. some people add oil to make it less sticky. 

 I whisk and it becomes a gooey texture, thinner then your pancake mix. If you don’t make pancakes, learn that first, crepes are much harder… they’re thinner and stickier. I personally use an iron skillet to make my food, so my foods tends to stick to the bottom. I need to adjust recipes accordingly.  

When you’re done mixing your batter heat a blob of oil (I use coconut oil) in your pan and turn it to medium. coconut oil burns burns bit you gonna have smoke in the kitchen, don’t get scared just open the windows..:-)

When it’s hot use  a ladle and starting in the middle of other pan drop the mixture and start turning your pan around, titling it in a circular motion. the goal is to help your batter spread in the an evenly. Typically if u add to much batter it will come out more like pancakes but this one won’t bubble it will burn too fast instead.

So aside from you playing with this process, one thing I can tell you, the way you know the first side of your crepes are done is if the edges get dryer then the rest or even a bit brown. if it gets dark brown your burning it. 

So please experiment, don’t get all so frustrated, the pont is to have fun. 

If u are using a non-stick pan the  danger of scratching the bottom is there bc you will need some sort of a tool to help it turn once on side is done. I use a metal spatula. (I avoid all plastic).

Some experienced crepe makers just flip them in the pan they don’t use any tools in the pan. 


Now it’s time to play. You need to feel it out. play with the heat settting, we the amount of oil u use…how long u fry, everything. 

People publish recipes and believe that everyone is using the same stove, pan, oil, and amount of patience…well they couldn’t be more further from the truth. 

Making food is an adventure, not a chore, especially when you’re trying out new recipes. please have fun. 

You might burn, cuss, sweat, but at the end it’s just a new adventure…

So if your batter looks like this in the pan, it’s OK don’t panic. it’s important to be patient with yourself. even this might happen. it’s ok. You’re experimenting. 

Don’t forget to add a half teaspoon of oil to an iron skillet or just a drop to a non-stick just to be on the safe side…

Eventually rhis might happen for you too. remember get it as think as you can without burning it. Just add add a bit water to it to thin it if u have to.

Some people make it with milk only, some a 50-50 ratio of water and milk…again something to experiment with. 

Eventually you gonna have these 🙂
